Bombay Toast Scramble
Savory scrambled eggs with a medley of spices and vegetables, inspired by Bombay street food.
Ingredients
- 6 Large White Eggs
- 1/2 medium Onion
- 1 medium Tomato
- 1-2, finely chopped Green chilies
- 1 tsp Ginger Garlic Paste
- 1/2 tsp Turmeric powder
- 1/2 tsp Cumin powder
- 1/2 tsp Coriander powder
- 1/4 tsp Garam masala
- to taste Salt
- 2 tbsp, chopped Fresh cilantro
- 1 tbsp Butter or Ghee
- 3 slices, toasted French or Italian Bread
Instructions
- In a bowl, whisk together eggs, salt, turmeric powder, cumin powder, coriander powder and garam masala.
- Heat butter (or ghee for authentic flavour) in a pan. Add chopped onion and green chilies and sauté until onions are translucent and lightly browned.
- Add ginger garlic paste and sauté for another minute until fragrant.
- Add chopped tomato and cook until they soften and start to release their juices.
- Pour the egg mixture into the pan and scramble, cooking until the eggs are set but still moist. Avoid overcooking for a better texture.
- Garnish with fresh cilantro.
- Serve hot with toasted French or Italian bread.
