  1. In a bowl, whisk together eggs, salt, turmeric powder, cumin powder, coriander powder and garam masala.
  2. Heat butter (or ghee for authentic flavour) in a pan. Add chopped onion and green chilies and sauté until onions are translucent and lightly browned.
  3. Add ginger garlic paste and sauté for another minute until fragrant.
  4. Add chopped tomato and cook until they soften and start to release their juices.
  5. Pour the egg mixture into the pan and scramble, cooking until the eggs are set but still moist. Avoid overcooking for a better texture.
  6. Garnish with fresh cilantro.
  7. Serve hot with toasted French or Italian bread.
