Vegetarian Quesadillas with Black Beans and Corn
Easy and satisfying quesadillas filled with black beans, corn, cheese, and your favorite toppings.
Ingredients
- 4 Flour Tortillas
- 1 can (15 oz), drained and rinsed Canned Black Beans
- 1 cup Frozen Corn
- 100g, shredded Cheese
- To taste Salsa
- To taste Sour Cream
- 1/2 tsp Chili Powder
- 1/4 tsp Cumin
Instructions
- In a small bowl, combine the black beans, corn, chili powder, and cumin. Mix well.
- Heat a large skillet or griddle over medium heat.
- Spread a thin layer of cheese on one half of each tortilla.
- Top with the black bean and corn mixture, and then with more cheese.
- Fold the tortilla in half.
- Cook for 3-4 minutes per side, or until golden brown and the cheese is melted and the filling is heated through. Press down gently with a spatula to ensure even cooking.
- Remove from skillet and let cool slightly before slicing into wedges.
- Serve warm with salsa and sour cream.
