Chinese Tomato & Egg Drop Soup (Dairy-Free, Gluten-Free)
A light and comforting Chinese-style tomato and egg drop soup.
Ingredients
- 1 cup, diced Tomatoes
- 1 tsp Soya Sauce
- 2 cups Vegetable Broth
- 1 large, beaten Egg
- 1 tsp Cornstarch
- 1 tbsp Water
- 1 tbsp, chopped Green Onions
- Pinch White Pepper
- Few drops Sesame Oil
Instructions
- Bring vegetable broth to a boil in a saucepan.
- Add diced tomatoes and soy sauce. Simmer for 5 minutes.
- In a small bowl, whisk together cornstarch and water to form a slurry.
- Slowly pour the cornstarch slurry into the soup, stirring constantly, until the soup thickens slightly.
- Gradually drizzle the beaten egg into the soup, stirring gently to create egg ribbons.
- Stir in white pepper and sesame oil.
- Garnish with chopped green onions before serving. Serve immediately.
