Spinach and Mini Pepper Omelets

  1. In a bowl, whisk together eggs, milk or cream, salt, and pepper until well combined. Stir in fresh herbs, if using.
  2. Heat a lightly oiled non-stick skillet over medium heat.
  3. Add mini peppers to the skillet and cook for 2-3 minutes, until slightly softened.
  4. Add spinach and cook until just wilted, about 1 minute. Remove vegetables from the skillet and set aside.
  5. Pour half of the egg mixture into the skillet, tilting to coat the bottom evenly. Cook for 2-3 minutes, until the edges begin to set but the center is still slightly wet.
  6. Sprinkle half of the cooked vegetables over one half of the omelet. Dollop 1.5 tbsp of creamy dairy spread over the vegetables.
  7. Carefully fold the omelet in half and cook for another 1-2 minutes, until the filling is heated through and the omelet is set.
  8. Repeat with the remaining egg mixture and filling.
  9. Serve immediately.
