Spinach and Mini Pepper Omelets
Quick and healthy omelets packed with spinach and mini peppers.
Ingredients
- 6 large Eggs
- 1 cup, chopped Mini Bell Peppers
- 2 cups, roughly chopped Spinach
- 1/4 cup Milk or Cream
- 1/4 tsp Salt
- 1/8 tsp Black Pepper
- 1 tbsp, chopped (optional) Fresh Herbs (chives, parsley)
- 3 tbsp Creamy Dairy Spread
Instructions
- In a bowl, whisk together eggs, milk or cream, salt, and pepper until well combined. Stir in fresh herbs, if using.
- Heat a lightly oiled non-stick skillet over medium heat.
- Add mini peppers to the skillet and cook for 2-3 minutes, until slightly softened.
- Add spinach and cook until just wilted, about 1 minute. Remove vegetables from the skillet and set aside.
- Pour half of the egg mixture into the skillet, tilting to coat the bottom evenly. Cook for 2-3 minutes, until the edges begin to set but the center is still slightly wet.
- Sprinkle half of the cooked vegetables over one half of the omelet. Dollop 1.5 tbsp of creamy dairy spread over the vegetables.
- Carefully fold the omelet in half and cook for another 1-2 minutes, until the filling is heated through and the omelet is set.
- Repeat with the remaining egg mixture and filling.
- Serve immediately.
