Italian Scramble with Spinach and Mushrooms
A quick and easy low-carb breakfast scramble with Italian flavors, featuring spinach, mushrooms, and a touch of garlic.
Ingredients
- 8 large Eggs
- 4 cups Fresh Spinach
- 8 oz sliced Cremini Mushrooms
- 2 cloves minced Garlic
- 2 tbsp Olive Oil
- 1.5 tsp Dried Italian Herb Blend
- 1 tbsp chopped Fresh Basil
- 1/4 tsp Black Pepper
Instructions
- Heat olive oil in a large non-stick pan over medium heat.
- Add garlic and mushrooms, cook until softened and lightly browned, about 5 minutes. Stir occasionally.
- Add spinach and cook until wilted, about 2 minutes.
- Whisk eggs in a bowl with black pepper and fresh basil.
- Pour egg mixture into the pan over the vegetables. Sprinkle with Italian herb blend.
- Gently push the cooked egg from the edges towards the center, allowing uncooked egg to flow underneath. Continue until eggs are mostly set but still slightly moist.
- Remove from heat and serve immediately.
