Breakfast Burrito Bowl
Deconstructed breakfast burrito bowl with egg and cheese.
Ingredients
- 4 large Eggs
- 1 cup, cooked Basmati Rice
- 1/2 cup, canned, rinsed Black Beans
- 1/4 cup Salsa (low sodium)
- 1/4 medium, sliced Avocado
- 2 tbsp Cilantro
- Dash, to taste Hot Sauce
Instructions
- Scramble eggs in a non-stick pan with a little water or oil.
- Divide cooked Basmati Rice between two bowls.
- Top with scrambled eggs, black beans, and salsa.
- Garnish with avocado slices, cilantro and a dash of hot sauce.
