Tomato and Spinach Rice Bowls with Grilled Peppers
Healthy rice bowls featuring spinach, tomatoes, and grilled peppers for a light and satisfying lunch.
Ingredients
- 1 cup Rice
- 300 g Spinach
- 2 Tomatoes
- 1 Peppers
- 3 tbsp Salad Dressing
- 1 tbsp Lime Juice
- 2 cloves Garlic
- 1/4 tsp Smoked Paprika
Instructions
- Cook rice according to package instructions.
- Grill or roast the peppers until slightly charred, then dice.
- In a bowl, mix chopped spinach, diced tomatoes, grilled peppers, minced garlic, lime juice, smoked paprika and a pinch of salt and pepper.
- Add cooked rice to the vegetable mixture and toss with salad dressing.
- Serve immediately.
