Spicy Beef and Black Bean Burrito Bowls
Ingredients
- 1 can (796ml) black beans, drained and rinsed Unico Tomatoes, Chickpeas, Lentils or Beans
- 1 lb Ground Beef
- 2 cups Cooked Rice
- 1 cup Shredded Cheddar Cheese
- 1/2 cup Salsa
- 1 Avocado
- 1/2 cup, chopped (optional, for sweetness and depth) Redland Farms Pitted Prunes or Dried Apricots
- 2 bags, crushed Hot Kid Rice Crisps
- 2 tbsp Taco Seasoning
Instructions
- Brown ground beef in a skillet over medium-high heat. Drain excess fat.
- Add taco seasoning and 1/2 cup water to the beef. Simmer for 5 minutes.
- Stir in black beans and chopped dried apricots (optional). Heat through.
- Assemble bowls with rice, beef mixture, cheese, salsa, and avocado.
- Sprinkle crushed Hot Kid Rice Crisps on top for added texture.
