Spiced Chickpea, Potato & Tomato Soup
A warming and flavorful soup made with potatoes, tomatoes, chickpeas, and a blend of Mediterranean spices.
Ingredients
- 1/2 cup diced Potatoes
- 1 cup diced, fresh or canned Tomatoes
- 3/4 cup, drained and rinsed Chickpeas
- 2 cups Vegetable Broth
- 1 tbsp Olive Oil
- 1/4 cup, diced Onion
- 1 clove, minced Garlic
- 1/2 tsp Cumin
- 1/2 tsp Coriander
- 1/4 tsp Turmeric
- 1/4 tsp Smoked Paprika
- to taste Salt
- to taste Black Pepper
- 1 tbsp chopped (for garnish) Fresh Cilantro
Instructions
- Heat olive oil in a pot over medium heat.
- Add diced onion and minced garlic, sauté for 2-3 minutes until softened and fragrant.
- Add potatoes, diced tomatoes, chickpeas, cumin, coriander, turmeric, smoked paprika, salt, and pepper.
- Cook for another 3-5 minutes, stirring occasionally, allowing the spices to toast and release their flavors.
- Pour in vegetable broth and bring to a boil.
- Reduce heat, cover, and simmer for 20-25 minutes, or until potatoes are tender.
- Taste and adjust seasonings as needed.
- Garnish with fresh cilantro before serving.
