  1. Heat olive oil in a pot over medium heat.
  2. Add diced onion and minced garlic, sauté for 2-3 minutes until softened and fragrant.
  3. Add potatoes, diced tomatoes, chickpeas, cumin, coriander, turmeric, smoked paprika, salt, and pepper.
  4. Cook for another 3-5 minutes, stirring occasionally, allowing the spices to toast and release their flavors.
  5. Pour in vegetable broth and bring to a boil.
  6. Reduce heat, cover, and simmer for 20-25 minutes, or until potatoes are tender.
  7. Taste and adjust seasonings as needed.
  8. Garnish with fresh cilantro before serving.
