Spiced Black Bean and Corn Salad Wraps
Flavorful black bean and corn salad spiced with Indian spices, wrapped in whole wheat tortillas.
Ingredients
- 1 can (540 ml), drained Beans
- 1 cup frozen Corn
- 4 Tortillas
- 1/2 tsp each Seasonings (Chili Powder, Cumin)
- 1 cup, chopped Spinach
- 1 tbsp Lime Juice
- 1/4 cup, finely chopped Onion
Instructions
- In a bowl, mix black beans, corn, finely chopped onion, chili powder, cumin, lime juice, and salt. Mix thoroughly to ensure that the spices are evenly distributed.
- Add chopped spinach and mix to incorporate the spinach.
- Warm tortillas (this makes them more pliable and less likely to tear). You can warm them in a microwave for about 15-20 seconds, or on a dry skillet for a few seconds on each side.
- Fill each tortilla with spiced black bean and corn mixture. Wrap and serve immediately.
