Mediterranean Quinoa Salad (Vegetarian, Gluten-Free, Dairy-Free)
A refreshing and nutritious salad with quinoa, vegetables, and a lemon-herb dressing.
Ingredients
- 1/2 cup Quinoa
- 1 cup Vegetable Broth
- 1/2 cup Cucumber, diced
- 1/2 cup Tomato, diced
- 1/4 cup Red Onion, finely chopped
- 1/4 cup Kalamata Olives, pitted and halved
- 2 tbsp Fresh Parsley, chopped
- 1 tbsp Fresh Mint, chopped
- 2 tbsp Lemon Juice
- 2 tbsp Olive Oil
- 1/4 tsp Dried Oregano
- to taste Salt and Freshly Ground Black Pepper
Instructions
- Rinse quinoa thoroughly and cook in vegetable broth according to package directions for added flavor.
- Combine cooked quinoa with cucumber, tomato, red onion, and olives.
- In a small bowl, whisk together parsley, mint, lemon juice, olive oil, oregano, salt, and freshly ground black pepper. Using freshly ground black pepper enhances the flavor profile
- Pour dressing over quinoa mixture and toss gently. Allow the salad to sit for 10-15 minutes before serving to allow the flavors to meld.
