Pork and Tomato Stir-fry
Ingredients
- 300g Ground Pork
- 2 medium Tomatoes, diced
- 2 tbsp Soy Sauce (low sodium)
- 1 tsp Ginger, minced
- 2 cloves Garlic, minced
- 1 tsp Sesame Oil
- 2 Green Onions, sliced
- 1 tbsp Rice Wine Vinegar
- 1/4 tsp (optional) Red Pepper Flakes
Instructions
- Prepare all ingredients: dice tomatoes, mince ginger and garlic, and slice green onions.
- In a small bowl, combine soy sauce and rice wine vinegar to create a flavorful sauce.
- Heat sesame oil in a large skillet or wok over medium-high heat.
- Add ground pork and cook, breaking it apart with a spoon, until browned. Drain any excess fat.
- Add minced ginger and garlic and cook for another minute until fragrant.
- Stir in diced tomatoes and cook for 2-3 minutes until they soften slightly.
- Pour the soy sauce mixture over the pork and tomatoes. Add red pepper flakes if desired.
- Bring to a simmer and cook for 3-5 minutes, allowing the sauce to thicken slightly.
- Garnish with sliced green onions before serving.
