  1. Prepare all ingredients: dice tomatoes, mince ginger and garlic, and slice green onions.
  2. In a small bowl, combine soy sauce and rice wine vinegar to create a flavorful sauce.
  3. Heat sesame oil in a large skillet or wok over medium-high heat.
  4. Add ground pork and cook, breaking it apart with a spoon, until browned. Drain any excess fat.
  5. Add minced ginger and garlic and cook for another minute until fragrant.
  6. Stir in diced tomatoes and cook for 2-3 minutes until they soften slightly.
  7. Pour the soy sauce mixture over the pork and tomatoes. Add red pepper flakes if desired.
  8. Bring to a simmer and cook for 3-5 minutes, allowing the sauce to thicken slightly.
  9. Garnish with sliced green onions before serving.
