Mini Turkey Meatball Subs with Zucchini Fries
Fun and kid-friendly mini meatball subs featuring lean ground beef and a side of crispy zucchini fries.

- Preheat oven to 400°F (200°C).
- In a medium bowl, combine ground beef, breadcrumbs, garlic powder, parmesan cheese, Italian seasoning, egg, salt, and pepper. Mix well.
- Form into small meatballs, about 1 inch in diameter.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add meatballs and cook, turning occasionally, until browned on all sides and cooked through, about 8-10 minutes. Remove meatballs and set aside.
- Add crushed tomatoes to the skillet and bring to a simmer. Season with salt, pepper, and a pinch of sugar (optional). Simmer for 10 minutes.
- While meatballs and sauce are simmering, prepare zucchini fries. Cut zucchini into fries.
- In a bowl, toss zucchini fries with 2 tablespoons of olive oil, salt, and pepper.
- Place zucchini fries on a baking sheet and bake for 15-20 minutes, flipping halfway, or until tender and golden brown.
- Slice Italian bread into mini sub rolls. Hollow out a bit of the bread to make room for the filling.
- Spoon tomato sauce into the bread and top with meatballs and bean sprouts.
- Serve meatball subs hot with zucchini fries.
