Mini Turkey Meatball Subs with Zucchini Fries

  1. Preheat oven to 400°F (200°C).
  2. In a medium bowl, combine ground beef, breadcrumbs, garlic powder, parmesan cheese, Italian seasoning, egg, salt, and pepper. Mix well.
  3. Form into small meatballs, about 1 inch in diameter.
  4. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add meatballs and cook, turning occasionally, until browned on all sides and cooked through, about 8-10 minutes. Remove meatballs and set aside.
  5. Add crushed tomatoes to the skillet and bring to a simmer. Season with salt, pepper, and a pinch of sugar (optional). Simmer for 10 minutes.
  6. While meatballs and sauce are simmering, prepare zucchini fries. Cut zucchini into fries.
  7. In a bowl, toss zucchini fries with 2 tablespoons of olive oil, salt, and pepper.
  8. Place zucchini fries on a baking sheet and bake for 15-20 minutes, flipping halfway, or until tender and golden brown.
  9. Slice Italian bread into mini sub rolls. Hollow out a bit of the bread to make room for the filling.
  10. Spoon tomato sauce into the bread and top with meatballs and bean sprouts.
  11. Serve meatball subs hot with zucchini fries.
