Italian Chickpea Pasta Salad (Vegetarian, Dairy-Free, Gluten-Free)
A flavorful pasta salad with gluten-free pasta, chickpeas, and Italian-inspired flavors.
Ingredients
- 1 cup Gluten-Free Rotini Pasta
- 1/2 cup Canned Chickpeas, rinsed and drained
- 1/4 cup Red Bell Pepper, diced
- 1/4 cup Green Bell Pepper, diced
- 1/4 cup Black Olives, sliced
- 2 tbsp Sun-Dried Tomatoes, oil-packed, drained and chopped
- 2 tbsp Fresh Basil, chopped
- 1 tbsp Extra Virgin Olive Oil
- 1 tbsp Red Wine Vinegar
- 1/4 tsp Garlic Powder
- 1/4 tsp Dried Oregano
- to taste Salt
- to taste Black Pepper
Instructions
- Cook gluten-free pasta according to package directions until al dente. Rinse with cold water immediately and drain well.
- In a large bowl, combine pasta, chickpeas, bell peppers, olives, and sun-dried tomatoes.
- Add basil.
- In a small bowl, whisk together extra virgin olive oil, red wine vinegar, garlic powder, and dried oregano.
- Pour dressing over the pasta mixture and toss gently to combine.
- Season with salt and pepper to taste. Chill for at least 30 minutes to allow flavors to meld.
