Dark Chocolate Avocado Mousse Cups
Creamy and rich dark chocolate mousse made with avocado, a healthy and keto-friendly dessert with a hint of coffee.
Ingredients
- 1 large Avocado
- 1/2 cup Chocolate chips (at least 70% cacao)
- 1/4 cup Unsweetened almond milk
- 2 tablespoons Erythritol or monk fruit sweetener
- 1 teaspoon Vanilla extract
- 1/2 teaspoon Instant coffee powder
- Optional for topping Whipped cream (optional)
Instructions
- Melt the chocolate chips in the microwave in 30-second intervals, stirring in between to prevent burning. Alternatively, melt over a double boiler.
- In a food processor, combine avocado, almond milk, sweetener, vanilla extract, and instant coffee powder.
- Blend until completely smooth and creamy, scraping down the sides as needed.
- Pour in the melted chocolate and blend again until well combined and the mixture is uniform in color.
- Taste and adjust sweetness if necessary.
- Spoon the mousse into cups and refrigerate for at least 1 hour to allow the mousse to set.
- Top with keto-friendly whipped cream before serving.
