  1. Heat cooking oil in a large skillet or wok over medium-high heat.
  2. Add sliced bell peppers and stir-fry for about 5 minutes, until slightly softened.
  3. Add leftover chicken and fajita seasoning to the skillet. Stir-fry for another 3-5 minutes, until the chicken is heated through and coated with seasoning.
  4. Stir in soy sauce, salsa, lime juice, garlic powder, and onion powder, cooking for 1 minute.
  5. Taste and adjust seasonings as needed. Add a pinch of salt if necessary.
  6. Serve the chicken and pepper mixture over cooked rice.
  7. Top with dairy-free sour cream. Serve with celery and bread slices.
