Dairy-Free Chicken Fajita Stir-Fry
A quick and easy stir-fry featuring leftover chicken, colorful peppers, and a tangy dairy-free sauce served over rice.
Ingredients
- 2 cups shredded Leftover Chicken
- 2 medium, sliced Bell Peppers (various colors)
- 8 slices Bread Slices
- 1 package Celery Hearts
- 1/2 cup Salsa
- 1/2 cup Dairy-Free Sour Cream
- 2 tbsp Soy Sauce
- 2 cups cooked Rice
- 2 tbsp Cooking Oil
- 2 tbsp Fajita Seasoning
- 1 tbsp Lime Juice
- 1/2 tsp Garlic Powder
- 1/2 tsp Onion Powder
Instructions
- Heat cooking oil in a large skillet or wok over medium-high heat.
- Add sliced bell peppers and stir-fry for about 5 minutes, until slightly softened.
- Add leftover chicken and fajita seasoning to the skillet. Stir-fry for another 3-5 minutes, until the chicken is heated through and coated with seasoning.
- Stir in soy sauce, salsa, lime juice, garlic powder, and onion powder, cooking for 1 minute.
- Taste and adjust seasonings as needed. Add a pinch of salt if necessary.
- Serve the chicken and pepper mixture over cooked rice.
- Top with dairy-free sour cream. Serve with celery and bread slices.
