Thai Chickpea & Potato Salad with Peanut Dressing
A flavorful Thai-inspired salad featuring potatoes, chickpeas, and a creamy peanut dressing with a hint of spice.
Ingredients
- 1 medium, diced Potatoes
- 1/2 cup, rinsed and drained Chickpeas
- 2 tbsp Peanut Butter
- 1 tbsp Soy Sauce (Gluten-Free)
- 1 tbsp Lime Juice
- 1 tsp Maple Syrup
- 1/2 tsp Sriracha
- 1/2 clove, minced Garlic
- 1/2 tsp, grated Ginger
- 1 tbsp, chopped Cilantro
- 1/4 tsp Sesame Oil
Instructions
- Dice the potatoes and boil until tender. Drain and let cool completely.
- In a bowl, whisk together the peanut butter, soy sauce, lime juice, maple syrup, sriracha, minced garlic, grated ginger, and sesame oil to create the peanut dressing. Adjust ingredients to reach your desired level of sweetness and spice.
- In a separate bowl, gently combine the cooled potatoes and chickpeas.
- Pour the peanut dressing over the potato and chickpea mixture. Toss gently to combine, being mindful not to mash the potatoes.
- Garnish with chopped cilantro. Serve chilled or at room temperature for the best flavors.
