Spinach and Bell Pepper Sushi Rolls
A light and refreshing vegetarian sushi roll filled with spinach, bell peppers, and avocado.
Ingredients
- 1 cup, blanched Spinach
- 1/2 cup, julienned Mini Bell Peppers
- 1 cup Sushi Rice
- 2 Nori Sheets
- 1/2, sliced Avocado
- to taste Soy Sauce
- to taste Wasabi
- to taste Pickled Ginger
- 2 tbsp Rice Vinegar
- 1 tbsp Sugar
- 1/2 tsp Salt
Instructions
- Cook sushi rice according to package directions. While the rice is cooking, prepare a sushi vinegar mixture by combining rice vinegar, sugar, and salt in a small saucepan. Heat over low heat until sugar and salt are dissolved. Let cool slightly.
- Once the rice is cooked, gently mix in the sushi vinegar mixture until evenly distributed. This will give the rice its characteristic flavor and stickiness.
- Place a nori sheet on a bamboo rolling mat (makisu), shiny side down.
- Spread a thin, even layer of sushi rice over the nori sheet, leaving about 1 inch of space at the top edge.
- Arrange blanched spinach, julienned bell peppers, and avocado slices horizontally across the center of the rice.
- Using the bamboo mat, carefully roll the sushi tightly, starting from the edge closest to you. Press firmly to ensure a tight roll. Moisten the top edge of the nori sheet with a little water to seal the roll.
- Slice the roll into bite-sized pieces using a sharp, moistened knife. Wipe the knife clean between cuts to prevent sticking.
- Serve with soy sauce, wasabi, and pickled ginger. Consider adding a sprinkle of sesame seeds for added flavor and texture.
