  1. Cook sushi rice according to package directions. While the rice is cooking, prepare a sushi vinegar mixture by combining rice vinegar, sugar, and salt in a small saucepan. Heat over low heat until sugar and salt are dissolved. Let cool slightly.
  2. Once the rice is cooked, gently mix in the sushi vinegar mixture until evenly distributed. This will give the rice its characteristic flavor and stickiness.
  3. Place a nori sheet on a bamboo rolling mat (makisu), shiny side down.
  4. Spread a thin, even layer of sushi rice over the nori sheet, leaving about 1 inch of space at the top edge.
  5. Arrange blanched spinach, julienned bell peppers, and avocado slices horizontally across the center of the rice.
  6. Using the bamboo mat, carefully roll the sushi tightly, starting from the edge closest to you. Press firmly to ensure a tight roll. Moisten the top edge of the nori sheet with a little water to seal the roll.
  7. Slice the roll into bite-sized pieces using a sharp, moistened knife. Wipe the knife clean between cuts to prevent sticking.
  8. Serve with soy sauce, wasabi, and pickled ginger. Consider adding a sprinkle of sesame seeds for added flavor and texture.
