Bombay Spiced Veggie Toast
Savory toast topped with sautéed vegetables and a blend of aromatic Bombay spices.
Ingredients
- 4 Bread Slices
- 1/2 each, chopped Green & Red Peppers
- 1 cup, chopped Spinach
- 1 clove, minced Garlic
- 1/2 tsp each Seasonings (Garam Masala, Turmeric)
- 1 tbsp Oil
- 1/4 tsp Amchoor (Dry Mango Powder)
- 1 tbsp, chopped Cilantro
Instructions
- Heat the oil in a pan over medium heat. Add minced garlic and sauté until it turns light golden.
- Add chopped green and red peppers and sauté for about 2-3 minutes until they start to soften.
- Add spinach and cook until it wilts, about 1-2 minutes.
- Sprinkle garam masala, turmeric, amchoor (dry mango powder), and salt over the vegetables. Mix well and sauté for another minute to allow the spices to coat the vegetables evenly.
- Toast the bread slices until golden brown and crispy.
- Divide the sautéed vegetable mixture evenly over the toasted bread slices.
- Garnish with freshly chopped cilantro. Serve immediately.
