  1. Heat the oil in a pan over medium heat. Add minced garlic and sauté until it turns light golden.
  2. Add chopped green and red peppers and sauté for about 2-3 minutes until they start to soften.
  3. Add spinach and cook until it wilts, about 1-2 minutes.
  4. Sprinkle garam masala, turmeric, amchoor (dry mango powder), and salt over the vegetables. Mix well and sauté for another minute to allow the spices to coat the vegetables evenly.
  5. Toast the bread slices until golden brown and crispy.
  6. Divide the sautéed vegetable mixture evenly over the toasted bread slices.
  7. Garnish with freshly chopped cilantro. Serve immediately.
