Tomato and Spinach Lentil Soup
A hearty and nutritious lentil soup featuring spinach, tomatoes, and warming spices.
Ingredients
- 1 lb Spinach
- 4 medium Tomatoes
- 1 large Onions
- 1 cup Lentils
- 7 cups Vegetable Broth
- 2 medium Carrots
- 2 stalks Celery
- 1 cube Bouillon Cubes
- 4 cloves Garlic
- 1 tsp Cumin
- 2 tbsp Lemon Juice
- 1/2 tsp Smoked Paprika
- 1 tbsp Olive Oil
Instructions
- Rinse lentils thoroughly under cold water. Set aside.
- Dice onions, carrots, and celery. Mince garlic. Sauté in olive oil until softened.
- Add minced garlic, cumin, and smoked paprika. Cook for 1 minute until fragrant.
- Add diced tomatoes, lentils, vegetable broth, and bouillon cube. Bring to a boil, then reduce heat and simmer for 35 minutes, or until lentils are tender.
- Stir in spinach during the last 5 minutes of cooking, until wilted.
- Remove from heat. Season with salt and pepper to taste.
- Stir in lemon juice before serving. Garnish with a dollop of plain yogurt (optional).
