Tomato and Spinach Lentil Soup

  1. Rinse lentils thoroughly under cold water. Set aside.
  2. Dice onions, carrots, and celery. Mince garlic. Sauté in olive oil until softened.
  3. Add minced garlic, cumin, and smoked paprika. Cook for 1 minute until fragrant.
  4. Add diced tomatoes, lentils, vegetable broth, and bouillon cube. Bring to a boil, then reduce heat and simmer for 35 minutes, or until lentils are tender.
  5. Stir in spinach during the last 5 minutes of cooking, until wilted.
  6. Remove from heat. Season with salt and pepper to taste.
  7. Stir in lemon juice before serving. Garnish with a dollop of plain yogurt (optional).
