Pork and Egg Scramble
Ingredients
- 200g Ground Pork
- 6 large Eggs
- 1 medium, diced Tomatoes
- 1/4, diced Cucumber
- 1 tbsp Olive Oil
- 1/2 tsp Garlic powder
- 1/2 tsp Onion powder
- 1/4 tsp (optional) Red pepper flakes
- to taste Salt
- to taste Black pepper
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add ground pork and cook, breaking it up with a spoon, until browned. Season with garlic powder, onion powder, salt, pepper, and optional red pepper flakes.
- Once the pork is nearly cooked through, drain any excess grease from the skillet.
- Whisk eggs in a bowl with a pinch of salt and pepper.
- Pour the eggs into the skillet with the pork.
- Stir gently until the eggs are cooked through but still slightly moist.
- Stir in diced tomatoes and cucumber during the last minute of cooking to warm them slightly without making them soggy.
- Serve immediately.
