  1. Heat olive oil in a large skillet over medium heat.
  2. Add ground pork and cook, breaking it up with a spoon, until browned. Season with garlic powder, onion powder, salt, pepper, and optional red pepper flakes.
  3. Once the pork is nearly cooked through, drain any excess grease from the skillet.
  4. Whisk eggs in a bowl with a pinch of salt and pepper.
  5. Pour the eggs into the skillet with the pork.
  6. Stir gently until the eggs are cooked through but still slightly moist.
  7. Stir in diced tomatoes and cucumber during the last minute of cooking to warm them slightly without making them soggy.
  8. Serve immediately.
