  1. Cook rice noodles according to package directions. Drain and rinse under cold water to prevent sticking.
  2. While the noodles are cooking, whisk together peanut butter, gluten-free soy sauce, lime juice, maple syrup, and sriracha (if using). Add a little water, 1 tablespoon at a time, to thin the sauce to your desired consistency.
  3. In a bowl, combine the cooked noodles with the peanut sauce. Toss to coat evenly.
  4. Add julienned red bell pepper and carrots. Toss again to distribute the vegetables.
  5. Garnish with sliced green onions and sesame oil.
  6. Serve immediately or chill for later.
