Thai-Inspired Peanut Noodles
A quick and easy noodle dish with a creamy peanut sauce and crunchy vegetables.
Ingredients
- 4 oz Rice Noodles
- 2 tbsp Natural Peanut Butter
- 1 tbsp Gluten-Free Soy Sauce
- 1 tbsp Lime Juice
- 1 tsp Maple Syrup
- 1/4 cup, julienned Red Bell Pepper
- 1/4 cup, julienned Carrots
- 2 tbsp, sliced Green Onions
- 1 tsp Sesame Oil
- 1/4 tsp (optional) Sriracha Sauce
Instructions
- Cook rice noodles according to package directions. Drain and rinse under cold water to prevent sticking.
- While the noodles are cooking, whisk together peanut butter, gluten-free soy sauce, lime juice, maple syrup, and sriracha (if using). Add a little water, 1 tablespoon at a time, to thin the sauce to your desired consistency.
- In a bowl, combine the cooked noodles with the peanut sauce. Toss to coat evenly.
- Add julienned red bell pepper and carrots. Toss again to distribute the vegetables.
- Garnish with sliced green onions and sesame oil.
- Serve immediately or chill for later.
