Spinach and Egg White Omelet with Tomato Salsa
A low-fat, protein-packed omelet filled with spinach and topped with a fresh tomato salsa.
Ingredients
- 500 g Spinach
- 1 Eggs
- 2 Tomatoes
- 1 Onion
- 1/2 Peppers
- 6 Egg Whites
- 2 tbsp Green Onions or Cilantro
- 1/2 tsp Hot Sauce
- 1/4 tsp Cumin
- 1/4 tsp Chili Powder
Instructions
- Dice the tomatoes and onion for the salsa. Chop cilantro or green onions and mix with tomatoes, onion, hot sauce, a pinch of cumin and chili powder.
- Wash and roughly chop the spinach.
- Crack egg into a bowl, separate egg whites into a bowl and whisk the egg and whites lightly.
- Heat a non-stick pan over medium heat.
- Sauté spinach until wilted.
- Pour egg mixture over spinach in the pan.
- Cook until egg whites are set. Gently fold omelet in half.
- Top with tomato salsa before serving.
