Spinach and Egg White Omelet with Tomato Salsa

Instructions

  1. Dice the tomatoes and onion for the salsa. Chop cilantro or green onions and mix with tomatoes, onion, hot sauce, a pinch of cumin and chili powder.
  2. Wash and roughly chop the spinach.
  3. Crack egg into a bowl, separate egg whites into a bowl and whisk the egg and whites lightly.
  4. Heat a non-stick pan over medium heat.
  5. Sauté spinach until wilted.
  6. Pour egg mixture over spinach in the pan.
  7. Cook until egg whites are set. Gently fold omelet in half.
  8. Top with tomato salsa before serving.
