Low-Carb Ground Pork and Rice Bowl
Ingredients
- 500g Ground Pork
- 1 cup Basmati Rice
- 2 medium Tomatoes
- 1/2 medium Cucumber
- 2 tbsp Soy Sauce (low sodium)
- 1 tsp Sesame Oil
- 2 stalks Green Onions
- 1 tsp Ginger (freshly grated)
- 2 cloves Garlic (minced)
- 1/4 tsp Red Pepper Flakes (optional)
Instructions
- Cook the rice according to package directions. Fluff with a fork and set aside.
- While rice is cooking, heat a skillet or wok over medium-high heat. Add a little cooking oil if the ground pork is very lean.
- Add the ground pork to the skillet and break it up with a spoon. Cook until browned, about 5-7 minutes. Drain any excess fat.
- Add the minced garlic and grated ginger to the skillet with the pork. Cook for another minute until fragrant.
- Stir in soy sauce and a pinch of red pepper flakes (if using).
- Dice the tomatoes and cucumber.
- Once the rice is cooked, divide it among bowls. Top with the ground pork mixture, diced tomatoes, and cucumber.
- Garnish with chopped green onions. Serve immediately.
