  1. Cook the rice according to package directions. Fluff with a fork and set aside.
  2. While rice is cooking, heat a skillet or wok over medium-high heat. Add a little cooking oil if the ground pork is very lean.
  3. Add the ground pork to the skillet and break it up with a spoon. Cook until browned, about 5-7 minutes. Drain any excess fat.
  4. Add the minced garlic and grated ginger to the skillet with the pork. Cook for another minute until fragrant.
  5. Stir in soy sauce and a pinch of red pepper flakes (if using).
  6. Dice the tomatoes and cucumber.
  7. Once the rice is cooked, divide it among bowls. Top with the ground pork mixture, diced tomatoes, and cucumber.
  8. Garnish with chopped green onions. Serve immediately.
