Ground Beef & Veggie Scramble (Low Sodium)
A hearty and customizable breakfast scramble packed with ground beef and your choice of low-sodium vegetables.
Ingredients
- 250 g Ground Beef (Lean)
- 4 large Eggs
- 1/2 medium, finely diced Onion
- 1/2, finely diced Bell pepper (any color)
- 2 cups, chopped Spinach (fresh)
- 1/4 tsp Garlic powder
- 1 tbsp, chopped Fresh parsley
- Pinch Black pepper
- 1 tbsp Olive Oil
Instructions
- Heat olive oil in a non-stick skillet over medium heat.
- Add finely diced onion and bell pepper; cook until softened and slightly caramelized (about 7 minutes), stirring frequently to prevent burning.
- Add ground beef and cook until browned, breaking it up with a spoon. Drain off any excess fat.
- Stir in chopped spinach and cook until just wilted, about 1 minute.
- In a separate bowl, whisk eggs with garlic powder and black pepper.
- Pour the egg mixture over the beef and vegetables in the skillet.
- Gently scramble the mixture until the eggs are cooked through but still slightly moist. Avoid overcooking for the best texture.
- Stir in fresh parsley just before serving.
- Serve immediately.
