  1. Preheat oven to 375°F (190°C).
  2. Remove sausage from casing. In a skillet, brown the sausage over medium heat, breaking it up with a spoon. Ensure sausage reaches an internal temperature of 160°F (71°C). Drain excess fat.
  3. Add diced peppers and onions to the skillet and cook until softened, about 5 minutes.
  4. In a bowl, whisk together eggs, heavy cream, Italian herbs, red pepper flakes (if using), salt, and pepper (if using).
  5. Pour the egg mixture into the skillet over the sausage and vegetables.
  6. Sprinkle shredded cheese over the top.
  7. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the frittata is set and a knife inserted in the center comes out clean.
  8. Let cool slightly before slicing and serving.
