Italian Sausage & Pepper Frittata
A savory low-carb frittata packed with Italian sausage, colorful bell peppers, and herbs.
Ingredients
- 250 g Italian Sausage (low sodium)
- 1 medium Sweet Peppers
- 1/2 medium Yellow Onions
- 6 large Eggs
- 1/4 cup Heavy Cream
- 1 tsp Dried Italian Herbs
- 1/4 tsp Red Pepper Flakes (optional)
- to taste Salt and Pepper (optional, to taste)
- 1/2 cup Tex Mex Shredded Cheese
Instructions
- Preheat oven to 375°F (190°C).
- Remove sausage from casing. In a skillet, brown the sausage over medium heat, breaking it up with a spoon. Ensure sausage reaches an internal temperature of 160°F (71°C). Drain excess fat.
- Add diced peppers and onions to the skillet and cook until softened, about 5 minutes.
- In a bowl, whisk together eggs, heavy cream, Italian herbs, red pepper flakes (if using), salt, and pepper (if using).
- Pour the egg mixture into the skillet over the sausage and vegetables.
- Sprinkle shredded cheese over the top.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the frittata is set and a knife inserted in the center comes out clean.
- Let cool slightly before slicing and serving.
