Mediterranean Chickpea & Tomato Grain-Free Bowl
A vibrant Mediterranean bowl with enhanced flavors, featuring chickpeas, tomatoes, and a lemon-tahini dressing served over cauliflower rice.
Ingredients
- 1 cup Chickpeas
- 1 cup, chopped Tomatoes
- 1/2 cup, diced Cucumber
- 1/4 cup, thinly sliced Red onion
- 2 tbsp Lemon juice
- 2 tbsp Tahini
- 2 tbsp Olive oil
- 1 cup Cauliflower rice
- 2 tbsp, chopped Fresh parsley
- 1/4 tsp Cumin
- 1/4 tsp Garlic powder
Instructions
- Heat 1 tbsp olive oil in a pan over medium heat. Add cauliflower rice and cook for about 5 minutes, stirring occasionally, until slightly softened.
- In a bowl, combine chickpeas, tomatoes, cucumber, and red onion.
- In a small bowl, whisk together lemon juice, tahini, the remaining olive oil, cumin, and garlic powder.
- Pour dressing over chickpea mixture and toss gently.
- Serve immediately.
