Creamy Vegan Potato and Onion Soup
A creamy and comforting soup featuring potatoes, onions, and garlic, perfect for a cozy lunch.
Ingredients
- 2 medium Potatoes
- 1 medium Onion
- 4 cloves Garlic
- 1 cup Frozen Green Vegetables
- 2.5 cups Vegetable broth
- 1/2 cup Vegan cream
- 1 tbsp Olive oil
- 1.5 tsp Fresh thyme
- Pinch Nutmeg
- 1 tsp Lemon juice
Instructions
- Dice potatoes and onions. Mince garlic.
- Heat olive oil in a pot over medium heat. Add onions and cook until softened, about 5 minutes.
- Add garlic and cook for another minute until fragrant.
- Add potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 25 minutes, or until potatoes are very tender.
- Add frozen green vegetables during the last 5 minutes of simmering.
- Remove from heat. Stir in vegan cream, thyme, a pinch of nutmeg, and a squeeze of lemon juice.
- Use an immersion blender to blend the soup until smooth and creamy. Be careful when blending hot liquids.
- Season with salt and pepper to taste.
- Serve hot, garnished with extra thyme if desired.
