Creamy Vegan Potato and Onion Soup

  1. Dice potatoes and onions. Mince garlic.
  2. Heat olive oil in a pot over medium heat. Add onions and cook until softened, about 5 minutes.
  3. Add garlic and cook for another minute until fragrant.
  4. Add potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 25 minutes, or until potatoes are very tender.
  5. Add frozen green vegetables during the last 5 minutes of simmering.
  6. Remove from heat. Stir in vegan cream, thyme, a pinch of nutmeg, and a squeeze of lemon juice.
  7. Use an immersion blender to blend the soup until smooth and creamy. Be careful when blending hot liquids.
  8. Season with salt and pepper to taste.
  9. Serve hot, garnished with extra thyme if desired.
