Creamy Tomato Soup with Gourmet Grilled Cheese Bites
Classic tomato soup made extra creamy with roasted garlic and served with gourmet bite-sized grilled cheese sandwiches for dipping.
Ingredients
- 2 cans (680 mL each) Tomato Sauce
- 2 cups Vegetable Broth
- 0.5 cup Heavy Cream
- 1 head Garlic
- 4-5, chopped Fresh Basil Leaves
- to taste Table Salt
- to taste Black Pepper
- 6 slices White Bread
- 3 slices Processed Cheese Slices
- 2 tbsp Butter
Instructions
- Preheat oven to 400°F (200°C).
- Cut off the top of the garlic head, drizzle with olive oil, wrap in foil, and roast for 30 minutes or until soft.
- Let cool, then squeeze out the roasted garlic cloves.
- In a pot, combine tomato sauce, vegetable broth, and roasted garlic. Bring to a simmer.
- Stir in heavy cream, fresh basil, salt, and pepper. Simmer for 15 minutes.
- While soup simmers, make grilled cheese bites: Butter one side of each bread slice.
- Place cheese slices between bread slices, butter-side out.
- Cut each sandwich into small squares.
- Cook grilled cheese bites in a pan over medium heat until golden brown and cheese is melted.
- Serve soup hot with grilled cheese bites.
