Ingredients

  1. Preheat oven to 400°F (200°C).
  2. Cut off the top of the garlic head, drizzle with olive oil, wrap in foil, and roast for 30 minutes or until soft.
  3. Let cool, then squeeze out the roasted garlic cloves.
  4. In a pot, combine tomato sauce, vegetable broth, and roasted garlic. Bring to a simmer.
  5. Stir in heavy cream, fresh basil, salt, and pepper. Simmer for 15 minutes.
  6. While soup simmers, make grilled cheese bites: Butter one side of each bread slice.
  7. Place cheese slices between bread slices, butter-side out.
  8. Cut each sandwich into small squares.
  9. Cook grilled cheese bites in a pan over medium heat until golden brown and cheese is melted.
  10. Serve soup hot with grilled cheese bites.
