Creamy Tomato & Halloumi Pasta

  1. Cook pasta according to package directions until al dente. Reserve 1/2 cup of pasta water before draining.
  2. While pasta is cooking, heat olive oil in a large pan over medium heat.
  3. Add halloumi cheese and cook until golden brown on both sides, about 3-4 minutes per side. Remove from pan and set aside.
  4. Pour pasta sauce into the pan and bring to a simmer. Add red pepper flakes, if using.
  5. Add cooked pasta to the sauce and toss to combine. If the sauce is too thick, add some of the reserved pasta water until desired consistency is reached.
  6. Return halloumi to the pan. Garnish with fresh basil before serving immediately.
