Creamy Tomato & Broccoli Soup with Havarti Grilled Cheese Bites

Ingredients

  1. In a pot, combine canned tomatoes, chopped broccoli florets, and organic bouillon cubes.
  2. Add water to cover the vegetables.
  3. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the broccoli is very tender.
  4. Use an immersion blender to puree the soup until smooth.
  5. Stir in heavy cream and season with salt and black pepper.
  6. Butter the outside of each bread slice.
  7. Place creamy havarti slices between two bread slices to create a sandwich.
  8. Heat olive oil in a skillet over medium heat.
  9. Grill the sandwiches until golden brown and the cheese is melted and gooey, about 2-3 minutes per side.
  10. Cut each grilled cheese into bite-sized pieces.
  11. Serve the soup hot with havarti grilled cheese bites on top or on the side.
