Creamy Tomato & Broccoli Soup with Havarti Grilled Cheese Bites
A comforting and creamy tomato and broccoli soup served with buttery grilled cheese bites made with havarti cheese.
Ingredients
- 796ml Canned Tomatoes
- 1 cup, chopped Broccoli Florets
- 2 cubes Organic Bouillon Cubes
- 150g, sliced Creamy Havarti
- 6 Bread Slices
- 2 tbsp Butter
- 1/4 cup Heavy Cream
- 1 tbsp Olive Oil
- to taste Salt
- to taste Black Pepper
Instructions
- In a pot, combine canned tomatoes, chopped broccoli florets, and organic bouillon cubes.
- Add water to cover the vegetables.
- Bring to a boil, then reduce heat and simmer for 20 minutes, or until the broccoli is very tender.
- Use an immersion blender to puree the soup until smooth.
- Stir in heavy cream and season with salt and black pepper.
- Butter the outside of each bread slice.
- Place creamy havarti slices between two bread slices to create a sandwich.
- Heat olive oil in a skillet over medium heat.
- Grill the sandwiches until golden brown and the cheese is melted and gooey, about 2-3 minutes per side.
- Cut each grilled cheese into bite-sized pieces.
- Serve the soup hot with havarti grilled cheese bites on top or on the side.
