Creamy Potato and Carrot Soup (French)
A comforting and velvety French-inspired soup featuring potatoes and carrots.
Ingredients
- 1 lb Potatoes
- 3 medium Carrots
- 1 medium Yellow onion
- 1 tbsp Chicken soup base
- 1/2 cup Heavy cream
- 2 tbsp Butter
- 1 tsp, chopped Fresh thyme
- 1 Bay leaf
- To taste Salt and white pepper
Instructions
- Dice potatoes, carrots, and onion.
- Melt butter in a large pot over medium heat. Add onion and cook until softened, about 5 minutes. Add potatoes and carrots and cook for 5 minutes, stirring occasionally.
- Add 4 cups of water or chicken broth and soup base. Add bay leaf. Bring to a boil, then reduce heat and simmer until vegetables are very tender, about 20-25 minutes.
- Remove the bay leaf. Puree the soup using an immersion blender or in batches in a regular blender until smooth.
- Stir in heavy cream and fresh thyme. Season with salt and white pepper. Heat through gently; do not boil.
- Serve hot, garnished with a swirl of cream and a sprig of thyme, if desired.
