Creamy Potato and Carrot Soup (French)

  1. Dice potatoes, carrots, and onion.
  2. Melt butter in a large pot over medium heat. Add onion and cook until softened, about 5 minutes. Add potatoes and carrots and cook for 5 minutes, stirring occasionally.
  3. Add 4 cups of water or chicken broth and soup base. Add bay leaf. Bring to a boil, then reduce heat and simmer until vegetables are very tender, about 20-25 minutes.
  4. Remove the bay leaf. Puree the soup using an immersion blender or in batches in a regular blender until smooth.
  5. Stir in heavy cream and fresh thyme. Season with salt and white pepper. Heat through gently; do not boil.
  6. Serve hot, garnished with a swirl of cream and a sprig of thyme, if desired.
