  1. Cook pasta in salted boiling water until al dente, reserving about 1/2 cup of pasta water before draining.
  2. While pasta cooks, heat olive oil in a large pan over medium heat. Add minced garlic and sauté until fragrant but not browned (about 1 minute).
  3. Add sliced mushrooms and cook until softened and browned, about 5-7 minutes. Season with salt and pepper.
  4. Stir in spinach and cook until wilted, about 2 minutes.
  5. Pour in heavy cream and simmer gently until slightly thickened, about 3-5 minutes.
  6. Season with a pinch of nutmeg, salt, and freshly ground black pepper to taste.
  7. Toss cooked pasta with the mushroom sauce, adding a little reserved pasta water if needed to create a smooth, emulsified sauce.
  8. Stir in grated Parmesan cheese. Serve immediately, garnishing with additional Parmesan cheese if desired.
