Creamy Mushroom and Spinach Pasta (Italian)
A comforting pasta dish with a rich, creamy mushroom sauce and fresh spinach.
Ingredients
- 250g Mushrooms
- 150g Spinach
- 300g Dry Pasta
- 150ml Heavy cream
- 3 cloves, minced Garlic
- 50g Parmesan cheese, grated
- 2 tbsp Olive oil
- Pinch Nutmeg, ground
- To taste Salt
- To taste Black pepper, freshly ground
Instructions
- Cook pasta in salted boiling water until al dente, reserving about 1/2 cup of pasta water before draining.
- While pasta cooks, heat olive oil in a large pan over medium heat. Add minced garlic and sauté until fragrant but not browned (about 1 minute).
- Add sliced mushrooms and cook until softened and browned, about 5-7 minutes. Season with salt and pepper.
- Stir in spinach and cook until wilted, about 2 minutes.
- Pour in heavy cream and simmer gently until slightly thickened, about 3-5 minutes.
- Season with a pinch of nutmeg, salt, and freshly ground black pepper to taste.
- Toss cooked pasta with the mushroom sauce, adding a little reserved pasta water if needed to create a smooth, emulsified sauce.
- Stir in grated Parmesan cheese. Serve immediately, garnishing with additional Parmesan cheese if desired.
