Cod au Gratin with Potatoes and Cheese
A delightful cod au gratin, featuring flaky cod fillets baked with creamy potatoes and a rich cheese sauce.
Ingredients
- 1.5 lb Cod fillets
- 2 medium Potatoes, thinly sliced
- 4 tbsp Butter
- 4 tbsp All-purpose flour
- 3 cups Milk
- 1 cup Cheddar cheese, shredded
- 1 tsp Dijon mustard
- 1/4 tsp Nutmeg
- 1/2 tsp Salt
- 1/4 tsp White pepper
- 1/4 cup Panko breadcrumbs
- 2 tbsp Fresh parsley, chopped
Instructions
- Preheat oven to 375°F (190°C).
- Lightly grease a baking dish.
- Layer thinly sliced potatoes on the bottom of the dish. Season with salt and pepper.
- Place cod fillets on top of the potatoes. Season with salt and pepper.
- In a saucepan, melt butter over medium heat.
- Whisk in flour and cook for 1 minute, stirring constantly.
- Gradually whisk in milk until smooth.
- Bring to a simmer, then reduce heat and cook until thickened, about 5 minutes. Stir frequently to prevent scorching.
- Stir in cheddar cheese, Dijon mustard, nutmeg, salt, and white pepper until cheese is melted and sauce is smooth.
- Pour cheese sauce evenly over cod fillets and potatoes.
- In a small bowl, combine breadcrumbs and chopped parsley. Sprinkle evenly over the top.
- Bake for 25-30 minutes, or until cod is cooked through, potatoes are tender, and topping is golden brown. If topping is browning too quickly, tent with foil.
- Let stand for a few minutes before serving. Garnish with additional fresh parsley if desired.
