Classic Vanilla Bean Cottage Cheese Ice Cream
A simple and creamy vanilla bean ice cream with a boost of protein from cottage cheese.
Ingredients
- 2 cups Cottage cheese
- 1 tsp Vanilla extract
- 1/2 cup Maple syrup
- 1/2 Vanilla bean
- 1/8 tsp Pinch of nutmeg
- 1/4 tsp Salt
- 1/4 cup Heavy cream
Instructions
- Blend cottage cheese until very smooth, ensuring no lumps remain. This may require a high-speed blender or food processor.
- Scrape vanilla bean and add seeds to blended cottage cheese.
- Add vanilla extract, maple syrup, nutmeg, heavy cream, and salt; blend until combined.
- Chill the mixture in the refrigerator for at least 30 minutes to allow flavors to meld.
- Pour mixture into an ice cream maker and churn according to the manufacturer’s instructions.
- Transfer to an airtight container and freeze for at least 2 hours before serving. For a softer consistency, let it sit at room temperature for 5-10 minutes before serving.
