  1. In a medium saucepan, combine water, butter, and a pinch of salt. Bring to a boil over medium heat.
  2. Remove from heat and quickly stir in all the flour at once using a wooden spoon until a smooth ball forms and pulls away from the sides of the pan.
  3. Let cool slightly for a few minutes. Then, beat in the eggs one at a time, mixing well after each addition until the dough is smooth and glossy.
  4. Heat vegetable oil in a deep fryer or large, heavy-bottomed pot to 350°F (175°C). Use a thermometer to maintain the correct temperature.
  5. Transfer the dough to a piping bag fitted with a large star tip.
  6. Carefully pipe short lengths of dough into the hot oil. Fry in batches, being careful not to overcrowd the pot, until golden brown and crispy on all sides.
  7. Remove with a slotted spoon and drain on paper towels.
  8. In a shallow bowl, combine sugar and ground cinnamon.
  9. While still warm, roll the churro bites in the cinnamon sugar mixture until well coated.
  10. For the chocolate dipping sauce, melt finely chopped milk chocolate with milk in a heatproof bowl set over a saucepan of simmering water (or in the microwave in 30-second intervals, stirring in between) until smooth. Stir until well combined.
  11. Serve the warm churro bites immediately with the chocolate dipping sauce for dipping.
