Chocolate Peanut Butter Cottage Cheese Ice Cream
A decadent chocolate peanut butter ice cream made healthier with cottage cheese.
Ingredients
- 2 cups Cottage cheese
- 1/4 cup Unsweetened cocoa powder
- 1/4 cup Peanut butter
- 1/2 cup Maple syrup
- 1 tsp Vanilla extract
- 1/4 tsp Salt
- 1/4 cup Chocolate chips (optional)
Instructions
- Blend cottage cheese until completely smooth.
- Add unsweetened cocoa powder, peanut butter, maple syrup, vanilla extract, and salt; blend until fully combined.
- For extra flavor, melt 2 tablespoons of peanut butter and swirl into the mixture before churning.
- Chill the mixture in the refrigerator for at least 30 minutes.
- Pour mixture into an ice cream maker and churn according to the manufacturer’s instructions.
- During the last few minutes of churning, add chocolate chips (if using) to the ice cream maker.
- Transfer to an airtight container and freeze for at least 2 hours before serving.
