  1. Blend cottage cheese until completely smooth.
  2. Add unsweetened cocoa powder, peanut butter, maple syrup, vanilla extract, and salt; blend until fully combined.
  3. For extra flavor, melt 2 tablespoons of peanut butter and swirl into the mixture before churning.
  4. Chill the mixture in the refrigerator for at least 30 minutes.
  5. Pour mixture into an ice cream maker and churn according to the manufacturer’s instructions.
  6. During the last few minutes of churning, add chocolate chips (if using) to the ice cream maker.
  7. Transfer to an airtight container and freeze for at least 2 hours before serving.
