  2. In a large skillet, sauté diced onions and bell peppers over medium heat until softened, about 5 minutes.
  3. Add the shredded leftover cooked chicken, black beans, and taco seasoning to the skillet. Stir well to combine, then add lemon juice and cook until heated through, about 5-7 minutes.
  4. Warm the beans in a separate saucepan or microwave, if desired.
  5. Assemble the bowls: Start with a base of cooked rice, then top with the chicken and veggie mixture, salsa, sour cream, shredded cheddar cheese, diced avocado, and crushed tortilla chips.
  6. Serve immediately.
