Chicken Taco Fiesta Bowls
A customizable taco bowl with rice, beans, leftover chicken, salsa, and sour cream.
Ingredients
- 2 cups Cooked rice
- 1 medium, diced Yellow Onions
- 2 cups shredded Leftover cooked chicken
- 1 (15-ounce) can, rinsed and drained Black beans
- 1 cup, chopped (any color) Bell peppers
- 1 cup Salsa
- 1 cup Sour cream
- 1 cup Shredded cheddar cheese
- 2 medium, diced Avocados
- 1 bag Tortilla chips
- 2 tablespoons Taco seasoning
- 1 tablespoon Lemon juice
Instructions
- Cook rice according to package directions.
- In a large skillet, sauté diced onions and bell peppers over medium heat until softened, about 5 minutes.
- Add the shredded leftover cooked chicken, black beans, and taco seasoning to the skillet. Stir well to combine, then add lemon juice and cook until heated through, about 5-7 minutes.
- Warm the beans in a separate saucepan or microwave, if desired.
- Assemble the bowls: Start with a base of cooked rice, then top with the chicken and veggie mixture, salsa, sour cream, shredded cheddar cheese, diced avocado, and crushed tortilla chips.
- Serve immediately.
