Chicken & Rice Power Bowl
A flavorful Mexican-inspired bowl with seasoned chicken, rice, and steamed vegetables.
Ingredients
- 1/2 cup Rice
- 4 oz Chicken Breast
- 1/2 cup Broccoli Florets
- 1/2 cup Cauliflower Florets
- 2 tbsp Dairy-Free Sour Cream
- 2 tbsp Salsa
- 1/2 tsp Chili Powder
- 1/4 tsp Cumin
- 1/4 tsp Smoked Paprika
- 1 tsp Lime Juice
- 1 tsp Olive Oil
Instructions
- Cook rice according to package directions.
- Cut chicken breast into bite-sized pieces. In a bowl, toss with olive oil, chili powder, cumin, smoked paprika, and lime juice.
- Steam broccoli and cauliflower until tender-crisp (about 5-7 minutes).
- In a skillet, cook the seasoned chicken over medium heat until fully cooked, ensuring internal temperature reaches 165°F (74°C).
- Assemble the bowl: Place rice at the bottom, top with chicken and steamed vegetables.
- Add dairy-free sour cream and salsa.
