Chicken Fajitas with Homemade Tortillas
Sizzling chicken fajitas with sautéed peppers and onions, served with warm, homemade tortillas and your favorite toppings – a festive Mexican fiesta for dinner.
Ingredients
- 1.5 lbs, sliced Boneless Skinless Chicken Breast
- 2, sliced Sweet Peppers
- 1 large, sliced Sweet Onions
- 2 tsp Chili powder
- 1 tsp Cumin
- 1 tsp Garlic powder
- 2 tbsp Olive oil
- To taste Mr. Goudas Table Salt
- To taste Black pepper
- 12 Casa Mendosa or Wonder 10'' Tortillas
- 1 tbsp Lime juice
- 1/2 tsp Paprika
- 1/4 tsp (optional) Cayenne pepper
Instructions
- In a bowl, mix sliced chicken with chili powder, cumin, garlic powder, paprika, cayenne pepper (if using), salt, pepper, and lime juice. Toss to coat evenly. Marinate for at least 15 minutes.
- Heat olive oil in a large skillet over medium-high heat. Add sliced peppers and onions and cook until softened, about 8 minutes. Remove vegetables from the skillet and set aside.
- Add the marinated chicken to the skillet and cook until fully cooked, reaching an internal temperature of 165°F (74°C), about 6-8 minutes.
- Return the cooked vegetables to the skillet with the chicken and toss to combine.
- Warm tortillas according to package instructions or in a dry skillet.
- Serve the chicken and vegetable mixture in warm tortillas. Add your favorite toppings such as salsa, sour cream, guacamole, and cheese.
