  2. Heat olive oil in a large skillet over medium-high heat. Add sliced peppers and onions and cook until softened, about 8 minutes. Remove vegetables from the skillet and set aside.
  3. Add the marinated chicken to the skillet and cook until fully cooked, reaching an internal temperature of 165°F (74°C), about 6-8 minutes.
  4. Return the cooked vegetables to the skillet with the chicken and toss to combine.
  5. Warm tortillas according to package instructions or in a dry skillet.
