Cheesy Chicken Fiesta Casserole
A comforting Mexican-inspired casserole with layers of seasoned chicken, hearty beans, soft tortillas, and melted cheese, topped with avocado and cilantro, a crowd-pleasing dinner.
Ingredients
- 1.5 lbs shredded (rotisserie chicken recommended for flavor) Cooked chicken
- 2 cans black beans (drained and rinsed) Beans
- 1 cup frozen or fresh Corn kernels
- 6 Tortillas
- 2 cups Mexican blend or cheddar Shredded Cheese
- 1 cup Salsa
- 2 tbsp Taco seasoning
- 1, diced (for topping) Avocado
- 2 tbsp chopped (for topping) Cilantro
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, combine chicken, beans, corn, salsa, and taco seasoning. Mix well to ensure chicken is evenly coated.
- Cut tortillas into wedges.
- Layer tortilla wedges, chicken mixture, and shredded cheese in a casserole dish. Repeat layers until all ingredients are used, ending with a generous layer of cheese.
- Bake for 30-35 minutes, or until bubbly and golden brown. Let stand for a few minutes before serving.
- Top with diced avocado and fresh cilantro before serving.
