Potato and Chickpea Fritters with Tomato Relish

Ingredients
- 1/2 cup, mashed Potatoes
- 1/2 cup, mashed Chickpeas
- 1/2 cup, diced Tomatoes
- 2 tbsp Olive oil
- 1/4 cup, finely chopped Red onion
- 1 clove, minced Garlic
- 1/2 tsp Cumin
- 1/4 tsp Chili powder
- 2 tbsp, chopped Fresh cilantro
- 1 tbsp Lime juice
- to taste Salt
- to taste Black pepper
Instructions
- In a bowl, combine mashed potatoes, mashed chickpeas, chopped red onion, minced garlic, cumin, chili powder, salt, and black pepper.
- Form the mixture into small, flat fritters.
- Heat olive oil in a skillet over medium heat.
- Cook fritters for 6-8 minutes per side, or until golden brown and crispy, ensuring they are heated through.
- For the tomato relish, combine diced tomatoes, chopped fresh cilantro, and lime juice in a small bowl. Season with salt and black pepper to taste.
- Serve fritters hot with tomato relish. Garnish with extra fresh cilantro if desired.
