Coconut Almond Chia Seed Pudding
A creamy and satisfying low-carb chia seed pudding with coconut milk and almond extract, perfect for a quick breakfast.
Ingredients
- 1/4 cup Chia Seeds
- 2 cups Unsweetened Coconut Milk (full-fat recommended for creaminess)
- 1/2 tsp Almond Extract
- 2 tbsp Unsweetened Shredded Coconut (optional)
- 2 tbsp Slivered Almonds (optional)
- 1/4 tsp Vanilla Extract
- to taste Liquid Stevia or Erythritol (optional, to taste)
Instructions
- In a large bowl or individual serving jars, whisk together chia seeds, coconut milk, almond extract, and vanilla extract.
- Add liquid stevia or erythritol to taste, if desired, for added sweetness. Start with a small amount and adjust as needed.
- Stir very well to ensure chia seeds are evenly distributed. This prevents clumping.
- Cover the bowl or seal the jars, and refrigerate for at least 4 hours, or preferably overnight. This allows the chia seeds to absorb the liquid and create a pudding-like consistency.
- Before serving, stir the pudding well. If the pudding is too thick, add a splash more coconut milk to reach your desired consistency.
- Top with unsweetened shredded coconut and slivered almonds, if desired. Other low-carb toppings like berries or chopped nuts can also be used.
- Serve chilled.
