Chickpea & Tomato Taco Bowl
A quick Mexican-inspired taco bowl with spiced chickpeas, tomatoes, and your favorite toppings.
Ingredients
- 1 cup Chickpeas
- 1 cup Canned Diced Tomatoes
- 1 cup Cooked Rice (Gluten-Free)
- 1 tsp Chili Powder
- 1/2 tsp Cumin
- 1/4 tsp Smoked Paprika
- 1/2, sliced Avocado
- 2 tbsp Salsa
- 1 tbsp Lime Juice
Instructions
- Rinse and drain the chickpeas.
- In a skillet, combine chickpeas, diced tomatoes, chili powder, cumin, and smoked paprika. Cook over medium heat for 10 minutes, stirring occasionally, until heated through and slightly thickened.
- Prepare the rice as directed.
- Assemble the bowl: rice, chickpea and tomato mixture, sliced avocado, salsa, and a squeeze of lime juice.
- Serve immediately.
