Vegetable Korma with Naan
Creamy and flavorful vegetable korma served with warm naan.

- Soak cashews in warm water for 30 minutes. Grind to a smooth paste.
- Heat oil or ghee in a pan. Add cumin seeds and cardamom pods. Let them splutter.
- Add finely chopped onions and sauté until golden brown.
- Add grated ginger and minced garlic. Sauté for a minute until fragrant.
- Add tomato paste, garam masala, turmeric powder, coriander powder, and salt. Sauté for 5 minutes until the spices are well cooked.
- Add frozen mixed vegetables and cashews paste. Mix well and cook for 10-12 minutes until the vegetables are tender.
- Stir in heavy cream or coconut milk and simmer for 5-7 minutes until the korma reaches your desired consistency.
- Season with salt to taste. Garnish with chopped cilantro.
- Serve hot with warm naan.
