Vegetable Korma with Naan

Ingredients

Instructions

  1. Soak cashews in warm water for 30 minutes. Grind to a smooth paste.
  2. Heat oil or ghee in a pan. Add cumin seeds and cardamom pods. Let them splutter.
  3. Add finely chopped onions and sauté until golden brown.
  4. Add grated ginger and minced garlic. Sauté for a minute until fragrant.
  5. Add tomato paste, garam masala, turmeric powder, coriander powder, and salt. Sauté for 5 minutes until the spices are well cooked.
  6. Add frozen mixed vegetables and cashews paste. Mix well and cook for 10-12 minutes until the vegetables are tender.
  7. Stir in heavy cream or coconut milk and simmer for 5-7 minutes until the korma reaches your desired consistency.
  8. Season with salt to taste. Garnish with chopped cilantro.
  9. Serve hot with warm naan.
