Canadian Tomato Soup with Grilled Cheese Croutons
A hearty tomato soup with grilled cheese croutons, perfect for a comforting Canadian meal.
Ingredients
- 1 (28 oz) can Canned diced tomatoes
- 4 cups Vegetable broth
- 1/2 Onion, chopped
- 2 cloves Garlic, minced
- 1 tsp Dried basil
- 1 tsp Sugar
- To taste Salt and black pepper
- 6 slices Bread slices
- 3 slices Cheese Slices
- 3 tbsp Butter
Instructions
- In a large pot, sauté chopped onion and minced garlic in a bit of olive oil until softened and fragrant.
- Add diced tomatoes, vegetable broth, dried basil, and a pinch of sugar (to balance acidity).
- Bring to a boil, then reduce heat and simmer for 20 minutes to allow flavors to meld. Use an immersion blender to smooth the soup (optional). Season with salt and black pepper.
- For the grilled cheese croutons: Butter bread slices generously. Place cheese slices between two slices of bread. Pan-fry in a skillet over medium heat until golden brown and cheese is melted. Cut into cubes and serve immediately on top of the tomato soup.
