Canadian Rice & Egg Hash with Bacon

  1. Heat 1 tbsp vegetable oil in a large skillet over medium heat.
  2. Add diced bacon and cook until crispy. Remove bacon and set aside, leaving bacon grease in the skillet.
  3. Add diced potatoes and yellow onion to the skillet and cook until potatoes are tender and browned, about 12-15 minutes. Season with dried thyme, salt, and pepper.
  4. Add cooked rice and cooked bacon to the skillet and mix well. Cook for another 3-5 minutes until heated through.
  5. Fry eggs separately in remaining 0.5 tbsp oil in a lightly oiled skillet until cooked to your liking.
  6. Serve the rice and potato hash topped with a fried egg.
  7. Drizzle with maple syrup and garnish with thinly sliced green onions. Serve immediately.
