Canadian Rice & Egg Hash with Bacon
A comforting Canadian-inspired hash featuring bacon, diced potatoes, leftover rice, and fried eggs for a hearty dinner.
Ingredients
- 3 large Eggs
- 1 cup Cooked Rice
- 8 slices, diced Bacon
- 2 medium, Yukon Gold, diced Potatoes
- 1/2, chopped Yellow Onion
- 1.5 tbsp, pure maple syrup Maple Syrup
- 1.5 tbsp, divided Vegetable Oil
- 1/4 tsp Dried Thyme
- to taste Salt and Black Pepper
- 2, thinly sliced, for garnish Green Onions
Instructions
- Heat 1 tbsp vegetable oil in a large skillet over medium heat.
- Add diced bacon and cook until crispy. Remove bacon and set aside, leaving bacon grease in the skillet.
- Add diced potatoes and yellow onion to the skillet and cook until potatoes are tender and browned, about 12-15 minutes. Season with dried thyme, salt, and pepper.
- Add cooked rice and cooked bacon to the skillet and mix well. Cook for another 3-5 minutes until heated through.
- Fry eggs separately in remaining 0.5 tbsp oil in a lightly oiled skillet until cooked to your liking.
- Serve the rice and potato hash topped with a fried egg.
- Drizzle with maple syrup and garnish with thinly sliced green onions. Serve immediately.
