Canadian Poutine Potato Bites with Smoked Paprika

  1. Preheat oven to 425°F (220°C). Slice potatoes into 1/2-inch thick rounds. Toss with vegetable oil, smoked paprika, garlic powder, salt, and pepper.
  2. Arrange potato rounds in a single layer on a baking sheet. Roast for 20-25 minutes, flipping halfway through, until golden brown and tender.
  3. While potatoes are roasting, prepare the gravy. In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute.
  4. Gradually whisk in milk until smooth. Add beef/chicken bouillon base and a pinch of smoked paprika. Bring to a simmer, stirring constantly until thickened.
  5. Season with salt and pepper to taste.
  6. To assemble, top each roasted potato round with cheese curds and a generous spoonful of gravy. Serve immediately while the cheese is still melty.
