Canadian Potato and Carrot Shepherd's Pie
A classic Canadian Shepherd's Pie with a potato and carrot base topped with a savory gravy.
Ingredients
- 1.5 lb Potatoes
- 2 medium Carrots
- 1 lb Ground beef
- 1 medium Yellow onion
- 1 cup Beef broth
- 1 tbsp Worcestershire sauce
- 1 tbsp Tomato paste
- 2 tbsp Butter
- 1/4 cup Milk
- 1/2 tsp Dried thyme
- To taste Salt and pepper
Instructions
- Peel and boil the potatoes and carrots until very tender. Drain well and mash with butter and milk until smooth and creamy. Season generously with salt and pepper.
- Preheat oven to 375°F (190°C).
- Brown ground beef in a large skillet over medium heat. Drain off any excess fat.
- Add diced onion to the skillet and cook until softened, about 5 minutes. Add tomato paste and dried thyme; cook for 1 minute, stirring constantly.
- Pour in beef broth and Worcestershire sauce. Bring to a simmer and cook until the sauce has thickened slightly, about 5-7 minutes. Season with salt and pepper.
- Pour the meat mixture into a baking dish and spread evenly.
- Top with the mashed potato and carrot mixture, spreading it to the edges of the dish.
- Bake for 25-30 minutes, or until the topping is golden brown and the filling is bubbling.
- Let cool slightly before serving.
