Canadian Pork Loin with Apple & Maple Glaze

Ingredients
- 1.5 lb Boneless Pork Loin Centre
- 1 large (Granny Smith or Honeycrisp) Apple
- 1/4 cup Maple Syrup
- 1 tbsp Dijon Mustard
- 2 medium Carrots
- 2 medium (Yukon Gold or Russet) Potatoes
- 2 tbsp Olive Oil
- 1/2 tsp Dried Thyme
- 1/2 tsp Salt
- 1/4 tsp Black Pepper
Instructions
- Preheat oven to 375°F (190°C).
- In a small bowl, mix maple syrup, Dijon mustard, and dried thyme to create the glaze.
- Place pork loin in a roasting pan. Score the top of the pork loin lightly in a crosshatch pattern.
- Brush the apple-maple glaze evenly over the pork loin, ensuring it seeps into the scores.
- Chop carrots and potatoes into evenly sized pieces, toss with olive oil, salt, and pepper.
- Arrange the vegetables around the pork loin in the roasting pan.
- Roast for 45-55 minutes, or until the internal temperature reaches 145°F (63°C), brushing with glaze occasionally. Use a meat thermometer to ensure accuracy.
- Let rest for 10 minutes before slicing and serving. This allows the juices to redistribute, resulting in a more tender and flavorful roast.
